Delicious vegan cheese pizza with arugula and nuts, gluten-free option

Ingredients

For the dough (make sure you prepare it half a day in advance) * :

- 15cl cold water

- 5g fresh yeast

- 250g flour

- 5g salt

- 2 tablespoons of olive oil

*Possible option: buy a pizza dough.

For the filling :

- Tomato pulp, seasoned to taste(onions, garlic, oregano, salt, pepper etc.)

- Candied vegetables(artichokes, dried tomatoes, mushrooms...)

- Roquette

- Nuts

- Assortment of Organic Plant Specialties, to be chosen according to your taste and preferences: Petit Frais (Garlic, Turmeric, Shallot & Chives), Petit Lorrain, Petit Bleu and/or Petit Alba

In addition for the gourmets:

- Sesame seeds

- Roasted flax and soybeans

Preparation:

For the dough :

Mix the cold water, fresh yeast and flour until you get a uniform mass.

Add 5g of salt, then continue to knead the dough.

When the salt is well incorporated, add the olive oil until you obtain a homogeneous mass.

When the mixture is well blended, leave to stand for 30 minutes in a bowl covered with a damp cloth.

Knead again and leave to rest for 30 minutes before forming a dough.

Leave to rest at room temperature and cover with a damp cloth for use during the day: the paste should be made in the morning for use in the evening. It can also be made the day before, and should then be kept in the refrigerator for the next day(in this case, be sure to take the dough out 2 hours before use)

For the filling :

Preheat the oven to 180°C.

Place the tomato pulp base on the rolled out pastry. Season with salt and pepper.

Add the candied vegetables, then the nuts.

Finally, add your favourite pieces of Plant Specialties!

Put the pizza in the oven for about 20 minutes: the cooking time depends on the thickness of the dough and the topping, but also on the power of your oven. Keep an eye on the cooking time; the edges of the pizza should be golden brown.

Take the pizza out of the oven and add the rocket leaves.

Finally, sprinkle with roasted sesame, flax and soya seeds.
