For 8 aumônières :

- 8 sheets of brick pastry

- Olive oil

- 240g fresh spinach

- 1 Petit Frais Échalote & Ciboulette Organic

- 80cl water

- Salt and pepper

- Raphia (natural string)

Preparation:

Preheat the oven to 200°C.

In a saucepan, blanch the spinach in boiling salted water for 2-3 minutes.

Drain and place directly into a bowl of ice water (or run under cold water until completely cool).

Once cooled, squeeze them to extract as much water as possible.

In a blender, add the Petit Frais Échalote & Ciboulette, water and spinach. Blend for 1 minute to obtain a creamy mixture.

Take out your sheets of brick pastry and brush both sides with oil.

Place 1-2 tablespoons of stuffing in the centre of your leaf. Form a small bag and close with raffia.

Place the aumônières on a baking tray lined with baking paper. Bake for 15 minutes (until golden brown).

You can prepare them in advance and reheat them at the last moment in the oven at 120°C.
